Liesel Maddox - Founder, Registered Dietitian Nutritionist, Certified Eating Disorder Specialist

If we haven't met yet, I want to formally introduce myself. I am a Registered Dietitian Nutritionist, Christian, military wife, dog mom, eating disorder specialist, and founder of Maddox Nutrition.

My #1 hope is to inspire and equip you on your journey with food. I care about ditching diet culture and finding full food freedom because I've walked through it myself and now get to walk alongside my clients in their journeys every single day.

My passion for food freedom as a believer in Christ comes from my own experience recovering from a severe eating disorder at a young age before becoming an intuitive eater myself. I know it's possible because I've been there.

Where it all started…

My experience as a dietitian started with working as a clinical dietitian at one of the top eating disorder treatment facilities in the country. I provided nutrition support, education, and counseling to patients in the inpatient, residential, partial-hospitalization, and intensive outpatient levels of care. I currently provide outpatient nutrition services to clients in recovery from eating disorders.

My mission for my online nutrition coaching services is to help Christian women break free from diet culture and disordered eating. I provide one-on-one virtual nutrition counseling to help women embrace food freedom and intuitive eating from a faith-based approach. As a dietitian and a believer, I am passionate about empowering Christian women to honor God in their health without dieting, disordered eating, or fixating on weight loss and appearances. I believe healing your relationship with food is the first step towards lifelong peace with food and your body.

  • Spending time with my sweet husband, Jaron, whose goofy personality and zeal for life brings out my best self and keeps me laughing

  • Hanging out with our dog, Olive. She’s a mini goldendoodle with a straight coat which means she’ll look like a golden retriever puppy forever!!

  • Exploring Colorado and working on our home. The military moved us to Colorado in 2023 after living in Texas for 7 years and growing up in the Midwest.

  • Moving my body in ways that bring me joy! I love to do Pilates, barre, yoga, walk, run, lift weights, hike, ski, dance, and play pickleball.

  • Planning our next trip and adventure
